The early green organic picual has all the characteristics of a conventional picual, but with the respect for the environment that organic cultivation entails. The Picual variety is characterized by being a full-bodied, bright green EVOO and very balanced in its bitterness and in its characteristic spiciness of this variety. It is an extra virgin olive with an intense fruitiness. Its most characteristic tasting notes are tomato plant, green almond and fresh grass. Among the best qualities of picual is its great resistance to oxidation, thanks to the significant amount of vitamin E it has and the large amount of antioxidants present as it is a green EVOO, that is, early harvested.
