Extra Virgin Olive Oil of the Picual variety, Limited Edition special production "First days of Harvest", in the Picual variety, made from selected green olives, cared for with care by our partners and under the expert care of field technicians from our own department agronomy in all collection and extraction processes. The harvest takes place during the month of October, before veraison, when the fruit is at its optimum point of ripeness, in order to present an oil with extraordinary organoleptic characteristics, accentuated in its earliest stage, packaged in a limited production with the first liters of green gold each new campaign. The entire extraction process is carried out cold and using mechanical procedures that do not alter the oil, preserving the flavor, aroma and characteristics of the fruit from which it comes.
Tasting Notes: “It is an extra virgin with an intense aroma, in which the fragrances of green almond, tomato, olive leaf, fresh grass stand out, as well as other aromatic nuances that remind us of green pepper, fig, mint, apple and the artichoke. On the palate it presents a balanced bitterness and spiciness of medium intensity”
